ONE-POT SPANISH CHICKEN AND CHORIZO RICE
This amazing one-pot Spanish-inspired meal is as delicious as the colors are vibrant. It’s a feast for the eyes and the senses. It involves several simple steps but is well worth the effort. The chicken pieces are rubbed with fragrant seasonings and then browned in the drippings from the chorizo sausage and simmered with onion, bell peppers, and rice until tender. It’s a family-style meal that’s company worthy.
Yield: 6 servings
Olive oil
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon dried Italian seasoning
6 (6-ounce) bone-in chicken thighs
8 ounces ground chorizo sausage, casings removed
1 medium-size onion, diced
1 small green bell pepper, seeded and diced
1 small red bell pepper, seeded and diced
Seasoned salt
Freshly ground black pepper
3 garlic cloves, minced
1 (10-ounce) package saffron rice
3 cups low-sodium chicken stock
1 (14-ounce) can fire-roasted tomatoes
1 bay leaf
½ cup pimiento-stuffed green olives
2 tablespoons chopped fresh cilantro
